Towards the end of July, the time is the change: we switch to holiday mode, we realize that the days, slowly but surely, are getting shorter again. Also in the vineyard there is a change, the color change. The red grapes were previously green and are now turning colour slowly.
2 months before harvesting, the grapes of our varieties (Bovale, Cannonau, Carignano, Monica) take on their deep red color. Majestic and beautiful, the pigmentation gradually embraces all the grapes, in foresight of the imminent ripening.
At the same time, the grape also breaks down acid and produces the sugar.
Now the thinning takes place, in which the low-ripened grapes are cut out so that the vine gains in quality.

Depending on the ripeness of the grapes, the wine harvest takes place between 20 September and 10 October. We start the olive harvest in the 2nd half of October.
